In honor of Enkutatash (Ethiopian New Year) I’m sharing my recipe for recipes Beef Kitfo with Awase. Kitfo is the ultimate celebration dish in Ethiopia, and played an important part of my wedding feast. It can be refined, as it is here, but at its simplest, it’s chunks of raw beef tossed in a spiced butter and then dunked in a spicy dip. There are a lot of versions of spiced butter in Ethiopia, but mine is closest to that made by my wife Maya’s tribe, the Gurage. | Marcus Samuelsson

Tech Hub on Instagram: "In Ethiopia, time moves to a different beat because the country follows its own ancient calendar, not the one used by most of the world. By this system, the year is about seven to eight years behind the Gregorian calendar. Its roots come from early Christian tradition and the Ethiopian Orthodox Tewahedo Church. The structure is distinct, with twelve months of exactly thirty days and a short thirteenth month called Pagume, made up of five days or six in leap years. The dif
