We start with fresh eggplant. We peel it, we lightly bread it and we fry it until every slice is golden brown. Then we layer it with homemade tomato sauce, 3 types of cheese and freeze it to lock in the freshness. All you have to do is pull it out of the freezer and bake it according to the simple instructions. People love it! We get lots of re-orders. | Mortadella Head

Sunday dinner is supposed to be about slowing down. Not grocery shopping. Not cooking all afternoon. Not cleaning the kitchen at night. We make our Italian-American classics from scratch, freeze them so you can have a real Sunday dinner—without spending your Sunday working. Lasagna, meatballs, chicken parm, manicotti. Bake, serve, sit down together. Tradition without the stress! | Mortadella Head

Chuck’s rule: cook with the oil that tastes the best. Your stovetop heat isn’t getting anywhere near the point where olive oil becomes a problem. So we fry with olive oil. Make it nice. | Mortadella Head
